Working safely with sulfur dioxide and KMS in wineries

Wineries, cideries, and meaderies may use sulfur dioxide (SO2) or KMS (potassium metabisulfite) as a disinfectant and a preservative. Serious injury or death can result if proper precautions are not taken while working with or around these chemicals. This bulletin discusses the hazards and provides an overview of how to reduce the risks.
